Banana Soy Muffins

Known as Far in Brittany, its country of origin, clafoutis is traditionally made with plums. Preheat oven to 350°F. Butter an 8” x 8” flan pan or cake pan with 1 tbsp butter.
Prepare 1 1/4 lbs fruit (plums, pitted cherries, apples or other fruit) and arrange in a greased pan. Whip together 3/4 cup milk, 2 eggs, 2 tbsp vanilla. Add 7 tbsp flour and 4 tbsp sugar one at a time to the liquid. Add 1/8 tsp salt last. Pour into pan over fruit. Sprinkle with sliced almonds (optional) Bake for 50-60 minutes Recipe can be doubled for a 9” x 13” pan Apple Clafoutis Sauté apples in 3 tbsp butter until golden. Add 3 tbsp Cognac or Calvados, 1/2 tsp cinnamon or nutmeg + 1/4 cup sugar. Coat apples and let sit about 20 minutes. Continue with recipe above. Trigonelle Budwig Cream

Mix together 4 tbs. (1/3 cup) Budwig mix 1 banana mashed 1/3-cup yogurt (or more) Juice of 1/2 lemon. Mix and let stand in a covered container overnight in the fridge to soften the seeds. For Variety: You can add fresh fruit such as chopped apples, pears, melon etc.If the mix is very stiff, add more yogurt or fruit juice to thin it out.
